The Jade Rabbit Punch

It’s Chinese New Year today, so may we take this opportunity to say Kung Hei Fat Choy (that’s Happy New Year in Chinese). If you’re not joining in the celebrations around Chinatown why not toast in the Year of the Rabbit with a delicious punch made with green tea, tangy apple juice, Chinese allspice and Courvoisier Exclusif?


 

Courvoisier Jade Rabbit

2 parts Courvoisier Exclusif
3 parts green tea
1 part port
1 part lime juice
0.75 parts sugar syrup
3 parts apple juice
Chinese allspice to taste

Method:

Brew one green tea bag in freshly boiled water. Remove tea bag and infuse with the sugar syrup, and Chinese allspice until aromatic.  Add the remaining ingredients and leave for 20 minutes to cool and infuse. Serve in freshly iced glasses with a slice of lime and apple.
