When I say that this is a good entry level spiced rum, I really don’t mean that in a negative way. Far from it. This is a rum that pretty much anyone can enjoy. It’s light, spicy and ever-so slightly sweet on the nose with a vanilla-like creaminess that’s reminiscent of a good cream soda. I get notes of demerara sugar – not the dark, rich kind, definitely the lighter, golden version. There’s fudge too, and traces of nutmeg, or maybe that’s cinnamon, whatever, it works (this is what happens when I close my eyes and allow my mind to drift to my Caribbean roots!)

As for the taste, yup, that vanilla is there alright, lending an agreeable sweetness. Then things get a little bitter – almost like burnt caramel – at the finish which comes a surprise. It goes down smoothly though, which is the main thing and tastes equally good over ice or given length and an extra hit of spice in the suggested serve with ginger ale.

It looks good in the glass with a lovely sunshine gold colour, has a smooth creaminess with hints of vanilla on the nose and is enjoyably full in the mouth. The vanilla’s there in the taste too, along with some cinnamon, ginger and something that reminds me of a rich sherry. There’s a subtle bite in the finish but overall it still retains a nice smoothness.

In the Spiced Gekko it makes a lovely, simple drink working well with the ginger ale and coming through for a really refreshing summer cocktail. I can also see it served neat alongside a coffee in winter, maybe in coffee-based cocktails too. Rum Espresso Martini anyone?

Fun Fact

The Lambs rum brand was created by Alfred Lamb in 1849. He sourced the finest Caribbean rums, blended and aged them in barrels stored in warehouses beneath the Thames.

Recipes

Spiced Gekko

50 ml Lamb’s Spiced rum
75 ml ginger ale
2 wedges of lemon/lime

Method:
Build ingredients over cubed ice in a highball glass.

Chilled Gekko

50 ml Lamb’s Spiced rum
75 ml cloudy apple juice
2 large wedges of fresh lemon

Method:
Build ingredients over cubed ice in a highball glass. Squeeze lemon wedges over finished drink.

Lamb’s Spiced Tea

37.5 ml Lamb’s Spiced rum
15 ml cassis
15 ml peach schnapps
25 ml fresh lemon juice
5 ml sugar syrup
Ginger beer

Method:
Shake ingredients over ice. Serve over cubed ice in a highball glass. Top with ginger beer.

Silence of the Lambs

37.5 ml Lamb’s Spiced rum
20 ml Cointreau
25 ml cranberry juice
37.5 ml cloudy apple juice
2 wedges of fresh lime
Apple to garnish

Method:
Shake ingredients over ice and double strain. Serve in a chilled martini glass, garnish with an apple fan.
