“I thought about several people that inspire me, like for instance, Salvador Dali, but then I thought there are actually people around us who inspire us every day. My father has been working in the hospitality industry for more than 40 years and I wanted to pay homage to him.

One of my earliest memories was when I was child, I used to watch him at work. He knew the name of every one of his customers, he also remembered every drink they liked and I was really impressed. Everyone loved him, it was like ‘Hey Jose how are you?” I decided that when I grew up I wanted to be like him.

He was a kind of unconventional guy, during the day he was serving coffee, then in the evening he would mix drinks. My cocktail is called  “French Legacy”. “French” for G’Vine and “Legacy” for what my father has done for me.”

French Legacy

Ingredients

50ml G’Vine Floraison
10ml La Quintinye Vermouth Royal Blanc
10ml Fino Sherry Lastau
15ml thyme infused Champagne cordial

Method

Shake all the ingredients over ice and double strain into a chilled champagne flute. Garnish with a dried lotus leaf brushed with grape oil.
