Who’s the most inspiring person you’ve worked with and why?
Ago Perrone, he finds inspiration in everything, he is passionate about flavour and service to his guests and because his feet are firmly on the ground.
What makes a good bartender?
The ones who remember we are here for our guests.
Which bartenders do you admire and why?
Ago Perrone, Marian Beke, Brian Silva, Richard Hunt, Esther Medina, Erik Lorincz, Simone Caporalle, Alex Kratena, Charles Vexenat, Cas Ho… from a guest’s point of view, they are great at mixing drinks, it’s always nice to see them work and they are all professionals. You’ll never get bored if you go to visit them.
What’s your proudest moment as a bartender?
Every day when our guest leave happy and they promise to come back, then when they return and tell us what a fabulous time they had in our bar. That means we did our job correctly and we possibly excede expectations – that makes me proud.

That always depends on what is that you making.

What’s your definition of a bartender and a mixologist and where do you fit in?
A bartender tends the bar, a mixologist mixes, I fit in to both categories but I prefer to be referred to as a bartender…

La Perla in Maiden Lane, Artesian at The Langham, The Connaught bar at the Connaught hotel, China Tang at the Dorchester, Rules, Montgomery Place.
What’s your essential piece of bar kit?
A good shaker.
What’s your failsafe recipe to mix at home?
If you could mix a cocktail for anyone alive or dead, who would it be and why?
A Margarita – tequila makes people happy, if is hot it’s a refreshing drink and it ‘s warming ion cold weather. In other words, it’s a good drink at any time.
